Overnight Breakfast Cookie!

So I've seen this breakfast cookie all over the blog world and decided to finally make one! It was really filling from the carbs, protein, and healthy fats! Perfect post-workout meal and I will be making these on a regular basis after a long run or spin class! It's key to make this the night before so that the oats can absorb all of the liquids and the flavors can all meld together.

Overnight Breakfast Cookie
1/3 cup of instant oats
1/2 scoop of protein powder of choice (I use an 8g scoop)
1 banana, mashed
1 Tbsp almond or peanut butter
2 Tbsp non-dairy milk

Optional add-in's:
1/2 tsp cinnamon
1 Tbsp of dried fruit (such as raisins, cherries, or cranberries), chocolate chips, cocoa nibs, ground espresso beans, cocoa powder

Mash/mix all ingredients together in a bowl and then spread your gooey mixture onto a plate! Pop in the fridge and enjoy the next morning! You could also top it with some yogurt and/or fresh fruit!

This one had chocolate protein powder, cinnamon, and raisins!
